Harvest
We make extra virgin olive oil only from olives that come from our farm.
Harvest occurs in September-October.
Extraction
Extraction occurs immediately after harvest, in our olive oil mill, followed by filtration and storage in still tank with nitrogen.
Bottling
We do it in our own system, in the absence of oxygen.
