Harvest
We make extra virgin olive oil only from olives that come from our agricultural farm. Harvest starts in early September.
Extraction
Extraction occurs immediately after harvest, in our olive oil mill, followed by filtration and storage in still tank with nitrogen.
Organoleptic characteristics
Light fruity, with a taste of fruits, basil and lettuce, it is a sweet oil with a light bitter and peppery aftertaste. Color pale green.
Bottling
We do it in own system, in the absence of oxygen.
