Harvest
We make extra virgin olive oil only from olives that come from our agricultural farm. Harvest starts in October.
Extraction
Extraction occurs immediately after harvest, in our olive oil mill, followed by filtration and storage in still tank with nitrogen.
Organoleptic characteristics
Fruity with hints of chicory, cardoon and almond. Fragrant notes of black pepper and rosemary. Bitterness is distinct and pungency balanced. Color: dark green
Bottling
We do it in own system, in the absence of oxygen.
