Harvest
We make extra virgin olive oil only from olives that come from our farm. Harvest starts in early October.
Extraction
Extraction occurs immediately after harvest, in our olive oil mill, followed by filtration and storage in still tank with nitrogen.
Organoleptic characteristics
Medium fruity, with a taste of olive, hay, almond and marjoram. Has a pleasantly bitter and peppery aftertaste.
Bottling
We do it in own system, in the absence of oxygen.
