Harvest
We make extra virgin olive oil only from olives that come from our farm. Harvest starts in late September.
Extraction
Extraction occurs immediately after harvest, in our olive oil mill, followed by filtration and storage in still tank with nitrogen.
Organoleptic characteristics
Medium fruity, with a fragrance of herbs and tomatoes. Bitter and pepper balanced. You can use it on seafood or fish, steamed or in foil, fresh goat cheese and to make cakes. Color green pale.
Bottling
We do it in own system, in the absence of oxygen.
